Deluxe Oatmeal Cookie |

Cooking Time: 9 to 11 mins.
Cooling Time: 15 mins.
Servings: About 4 ½ dozen cookies
Ingredients
1 ¼ cups all-purpose flour
1 tsp. baking soda
¾ tsp. ground cinnamon
½ tsp. salt
1 cup (2 sticks) butter, softened
¾ cup granulated sugar
¾ cup packed brown sugar
⅛ tsp. vanilla extract
2 large eggs
3 cups quick-cooking or rolled oats
1 cup chopped nuts (optional)
Directions
- Preheat oven to 375 °F.
- Sift and combine flour, baking soda, cinnamon and salt in small bowl.
- Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.
- Beat in eggs; gradually beat in flour mixture.
- Stir in oats and nuts.
- Drop by rounded tablespoon onto nonstick baking sheets.
- Bake for 9 to 11 minutes.
- Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
